Recipe of the Week: Korrina's Carmel Corn

Quick note before we get into this week's post:  I've added the photo for last week's recipe so if you want to see the homemade Almond Joys- click here.

Time for another treat!  This week it's my carmel corn recipe.  About 15 years ago, I worked at one of those carmel corn places in a mall down in Phoenix and I adapted the recipe for home use.  This is that recipe!

Korrina's Carmel Corn
3/4 cup unpopped popcorn or 2 bags microwave popcorn
2/3 cup sugar
2/3 cup brown sugar
1/2 cup water
1/3 cup corn syrup
3 tablespoons butter
1 teaspoon baking soda
Pop the popcorn. Mix sugars, water, and corn syrup in large saucepan. Bring to boil, stirring often to melt sugar.  Add butter and cook to firm ball stage (245-248 degrees). Remove from heat. Stir in baking soda. Pour over popcorn and stir quickly!
